Dill and methi leaves along with brinjal are a rich source of vital vitamins and minerals. You can prepare a tasty and nutritious side dish called Suva methi baingan sabzi.

2 brinjals, ½ cup methi leaves, ½ cup dill leaves, 1 tomato, 1 tsp mustard oil, 2 garlic cloves, 2 green chillies, a small piece of ginger, 1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp mustard seeds, a pinch of asafoetida
1. Cut the brinjals into small cubes.
2. Finely chop the methi and dill leaves.
3. In a kadai, add oil. Once warm, add the asafoetida, mustard, cumin and fennel seeds. Once the mustard seeds splutter, add the ginger garlic paste. Saute for 2 minutes.
4. Add the finely chopped tomato and mix well.
5. Add the chopped brinjals and cover and cook on medium flame for 2-3 minutes.
6. Add the methi and dill leaves. Cook for another 5 minutes. Keep stirring in between. You can sprinkle few drops of water while all are getting cooked.
Delicious Suva Methi Baingan is ready. Serve with hot phulkas and relish the dish.
