Ingredients to make Steamed Oats Minicakes:
1½ cup oatmeal, ½ cup Rava roasted, 1 cup curd, 1 carrot grated, ½ teaspoon Eno fruit salt, salt to taste
Ingredients for seasoning:
1 teaspoon oil, ½ teaspoon Mustard seeds, 1 sprig curry leaves finely chopped, 1/4 teaspoon Asafoetida, 1 tablespoon Chana dal
Steps to make Steamed Oats Minicakes:
1. Heat oil. Add mustard seeds, once they splutter, add chana dal and roast till golden brown. Add curry leaves and asafoetida and saute for a few seconds. Remove from heat and set aside to cool.
2. In another pan, dry roast the oats on medium flame until a roasted aroma rises and it slightly changes in color. Cool and blend to a powder.
3. Mix together the oats powder and rava, roasted seasoning ingredients, and grated carrots.
4. Add curd, salt and a little water at a time to make it to a thick batter. Set it aside for 10-15 mins. Add the fruit salt and mix again
5. Pour into mini cake moulds and steam for 10-15 minutes until cooked through. Serve hot.
