Sponge Dosa, also known as Set Dosa is very easy to make and very light to eat. They do not make your stomach feel heavy even after they have have 2-3 of them. You can easily make it and in fact you can store in the refrigerator and use the next day too. Apart from being light it is also nutrious, having the right amount of protein, carbohydrates and fat.

1 cup - parbolied rice, ½ cup - thick or flattened rice, 2 tbsp - urad daal, 7-8 - fenugreek seeds, oil and salt - as per taste
1. In a bowl soak rice, urad daal and fenugreek seeds, rinse all the ingredients few times in water and wash them properly. Then soak them in clean water and keep them aside.
2. Take the flattened rice and wash it a couple of times with clean water and then add the flattened rice to the rest of the soaked ingredients.
3. Now grind all of them to make a coarse paste, as this will give a nice texture to your dosa.
4. Cover it and allow it to ferment for pprox 8-12 hours and further add salt to it. Add water if you wish improve the consistency.
5. Now take a griddle and heat it, smear some oil and wipe it off with a tissue paper. So as to make your base little oily.
6. Pour a laddleful of batter on the griddle, and spread it gently and evenly. Now cover the top of the lid for few minutes and allow it steam for few minutes. Turn around and continue with the same process and serve Hot !!!
You would go lip smacking.
