1 bunch of spinach leaves, ½ cup boiled corn kernels, 1 onion pureed, 1 tomato pureed, 1 tbsp melon seeds, 6-7 cashews, 1 tsp cumin seeds, 1 cinnamon stick
1. Wash the spinach leaves properly and blanch them in hot water.
2. Blend the leaves to a fine puree using mixer.
3.Blend melon seeds and cashews together. Add water to make it a fine paste.
4. Heat 2 tbsp oil in a kadai and add cumin seeds, let them crackle. Add cinnamon stick, and melon seeds-cashew paste and saute it.
5. Add onion puree and fry till it turns golden brown. Add tomato puree then.
6. Cook the onion tomato puree till it leaves the oil from sides. Add salt.
7. Once done, add spinach puree and mix properly with the paste.
8. Add boiled corn kernels and mix properly. Cook on a medium flame while stirring in between.
9. Cook for another 2 minutes and switch off the flame then.
Serve this Spinach/Palak Sabzi with rice or chapati.
