A simple, quick and easy to make vegetarian dish is favourite of all. Potato cubes will not only satitiate for a long time but also helps gain weight as they are loaded with healthy carbs and fats.

2 large potatoes, 1 tsp mustard seeds, 1 tsp cumin seeds, 1 string curry leaves, handful of chopped coriander leaves, 1 tsp lemon juice, 2 tsp grated coconut, black pepper, oil for cooking
1. Rinse, peel and cut potatoes in cubes.
2. Heat 2 tbsp oil in a pan and add mustard seeds, cumin seeds. When the seeds starts to pop add curry leaves.
3. Stir in potatoes, 1 tsp salt, black pepper. Reduce heat to medium low and add 1 tbsp. water. Cook, covered, until potatoes are tender, 20 to 25 minutes.
4. Add lemon juice. Adjust salt if required. Cook, uncovered, turning occasionally, until potatoes are golden, 8 to 10 minutes. Stir in coriander leaves.
Sprinkle grated coconut before serving.
