Paba is a mixed grain and legume flour pudding. It is a popular food in Ladakh. It is very easy to make and has high content of fiber and protein. It is made from yoches or paba flour. The ratio of flour mix is almost 85% barley/wheat flour along with local mix of legume – peas, broad beans, lathyrus flour. Kosnyot (local caraway) powder is added to enhance the taste and digestibility. You can surely try this super yummy dish and enhance your nutrition intake.

Yoches (mix of barley flour and legume flour)-1 cup, salt - as per taste, caraway seeds - 1 tsp
1. Place 2 cups of water in gas and bring it to boil, then add yoches slowly to boiling water and stir constantly using wooden spatula till dough like consistency.
2. Cook over moderate heat. Add some carawat seeds.
Serve hot or cold along with vegetables or milk/curd or Tsamik (corriander/mint, radish chutney) or Tangthur (green vegetable with yogurt).
