This one is a nutritious combo of boiled moth beans and spinach in tomato curry combined with grated coconut. It has a great taste and lovely aroma that goes well with roti and rice.

    Ingredients to make Matki aur Palak ki Curry:

    1 cup sprouted matki, 2 cups finely chopped spinach, 1 tbs oil, ½ tsp mustard seeds, 1 tsp chopped garlic, 5-6 curry leaves, ½ cup finely chopped tomatoes, salt as per taste, 1/4 cup grated coconut, ½ tsp coriander seeds, 1/4 tsp cumin seeds, 1/4 tsp fenugreek seeds, 3 whole dry Kashmiri red chili, 1 garlic clove, 1/4 tsp turmeric powder

    Steps to make Matki aur Palak ki Curry:

    1. Take a pan and heat oil in it, add mustard seeds, garlic and curry leaves as well. Saute for few seconds.

    2. Make a paste of grated coconut, coriander seeds, cumin seeds, fenugreek seeds, kashmiri red chilies, 1 garlic clove and turmeric powder. Add this paste to the pan and cook well.

    3. Add tomatoes and stir well for a minute.

    4. Add sprouted matki and salt. Mix them well.

    5. Add 1½ cups of water and mix well. Cover it and cook for almost 10-12 minutes.

    6. Add boiled spinach, mix well and cook for 1-2 minutes on medium flame.

    Serve hot with rice and roti
