This is one of the most wonderful recipes, which provides amazing health benefits. It is a rich source of B-complex vitamins, like vitamin B3 (niacin), B6, (pyridoxine), B5 (pantothenic acid), and essential minerals like zinc, iron, potassium, magnesium, and manganese. All these vitamins and minerals are crucial for the healthy growth and development.

Ingredients to make Karela Alu ki Patua:
4 karelas, 2 large potatoes, salt to taste, 1 tsp red chili powder, ½ tsp haldi, 2 tsp panch phoran masala, mustard oil as required, 3 sliced onions
Steps to make Karela Alu ki Patua:
1. Slice the karela in thin slices. Add 1 tsp oil to the sliced karela and leave it for 30 minutes.
2. After 30 minutes squeeze all the liquid from karela and drain them. It helps to remove the bitterness from the karelas
3. In a wok fry karelas till the color changes to light brown for about 7-8 minutes. Take out the karela's from the oil and keep aside.
4. In the same oil fry potatoes till half cooked. Remove from heat and keep aside.
5. Now in a heavy bottom pan, heat oil and add the panch phoran seeds to it. Fry for 2 minutes and add sliced onions to it, fry till translucent.
6. Add salt, turmeric, chili powder and fried karela and aloo to it. Cook till aloo and karela are done.
Your delicious dish is ready to be served with hot chappatis or parantha.
