Isn't it hard to come up with new breakfast ideas everyday? Here is a super easy, not to mention yummy breakfast treat for you. This recipe is the classic breakfast dish, hash brown, but replaces potatoes with sweet potatoes! This makes the hash browns slightly sweeter. Sweet potato is an excellent replacement for potato as it is much healthier than a potato. Sweet potatoes contain high amounts of vitamins and potassium. They are also excellent sources of carbohydrates, making the perfect start to your day.

Ingredients: 2 medium-sized sweet potatoes, 1 cup maida, a pinch of baking soda, salt, 2 tbsp oregano spice mix, 1 tbsp chilli flakes, 2 eggs, oil

    Steps:

    1. Wash the sweet potatoes thoroughly and peel them. Boil them halfway and let them cool in cold water.

    2. Cut the sweet potatoes into tiny chunks. Do not completely mash them. Now, add a pinch of baking soda, salt, oregano spice mix and chilli flakes to this. Mix well, keeping in mind not to turn this into a paste while at it.

    3. Now, add eggs to this mixture, along with maida to thicken the consistency.

    4. Heat pan on medium flame and make patties out of the sweet potato mixture, not too thick but not too thin either. Pan fry until golden brown on both sides. This will take about 4-5 minutes on each side.

Serve this on a morning with tomato sauce.

Note: You can also try adding different veggies to this recipe to add more nutritive value to the food. Bell peppers and onions are some really good options.
