Is your champ fond of bhindi? Then Dahi Bhindi ki Sabzi would be the right choice. This bhindi recipe is quick and easy curry prepared with curd. Bhindi is rich in pyridoxine, vitamin-K, minerals, and antioxidants.

Ingredients to make Dahi Bhindi ki Sabzi:
1 cup chopped ladies finger (bhindi), ¾ cup curds (dahi), ½ tsp. coriander powder, ¼ tsp. chilli powder, 1 tbsp. besan, ½ tsp. cumin seeds, ½ tsp. mustard seeds, ¼ tsp. fennel seeds, ¼ tsp. asafoetida, 6-7 curry leaves, salt to taste, 2 tbsp. oil, water as required
Steps to make Dahi Bhindi ki Sabzi:
1. Heat oil in a pan and add chopped bhindi and sauté on low flame for 10 minutes or until the bhindi are cooked. Remove the sautéed bhindi in a bowl and keep aside.
2. In the same pan, add oil and when it hot add mustard seeds and when it crackles add cumin seeds to splutter, add fennel seeds, asafoetida and curry leaves and sauté for few minutes.
3. Add besan, chilli powder, coriander powder, salt and sauté well until the raw smell of besan and chilli powder fades away. Add the sautéed bhindi and mix well and sprinkle little water, mix well and cover and cook for 2 minutes. Remove from heat and add well whisked curd and mix gently.
4. Heat the mixture and simmer the sauce till the mixture starts to thicken and the oil is floating on the top.
Serve Dahi Bhindi ki Sabzi to your champ with some hot phulkas.
