Corn is one of the most widely consumed cereal grains. Being a good source of antioxidants and vitamin A, corn promotes eye health. Corn Curry along with tomato, lemon and spices serves as a healthy side dish.

    Ingredients to make Corn Curry:

    Corn-1 cup, tomatoes-1 small, cumin powder- tsp, coriander leaves-few, lemon Juice -1 tsp and salt-to taste

    Steps to make Corn Curry:

    1. Wash and chop tomatoes and coriander leaves.

    2. Boil water in a sauce pan and add chopped tomatoes and corn. Cook for 5 minutes.

    3. Add oil in a pan, and cook the tomato and corn mixture for 3 minutes. Now add cumin powder, lemon juice and a pinch of salt. Cook for another 5-6 minutes.

    Take out the Corn Curry in a bowl and garnish with coriander leaves. Serve hot.
