A simple nutritious and highly tasty side dish is Chatpati Bitter Gourd Bhujiya. Bitter gourd is having high iron content in it. The dish is flavoured with garlic, lemon juice, and mild spices, which enhances the taste.

    Ingredients to make Chatpati Bitter Gourd Bhujya:

    2 bitter gourd, 1 onion, 2 green chiles, 1 tbsp ghee, 2-4 garlic cloves, 2 tomatoes, a pinch of chaat masala, 2 tsp lemon juice, a pinch of turmeric powder, 1 tsp chili powder, salt to taste

    Steps to make Chatpati Bitter Gourd Bhujiya:

    1. Wash and peel the bitter gourd. Grate it and pressure cook for one whistle in little water.

    2. Once the steam is cooled, drain out the water from the bitter gourd and remove onto a plate.

    3. In a kadai, add 1 tsp ghee. Add the finely chopped onions and garlic and saute for about 3-5 minutes or till the mixture turns golden brown.

    4. Add the dry spices, turmeric and red chili powder and saute for another 2 minutes. Add the finely chopped green chiles too.

    5. Add the chopped tomatoes and cook till they turn soft. Cover with the lid and keep checking in between stirring occasionally.

    6. Add the boiled bitter gourd and cook for another 2-3 minutes till the masala gets coated on the bitter gourd and you get a uniform mixture.

    7. Add salt, chaat masala, and lemon juice. Give a good mix and switch off the flame.

    Hot and delicious Chatpati Bitter Gourd Bhujiya is ready to be relished. Serve with either phulkas or steamed rice.
