Carrot Basket with Banana Surprise

Are you looking for a cake recipe to add the goodness of banana and carrot to it? Then treat with this cake, which is simple and easy to make. Banana is a good source of dietary fibre, vitamin C, vitamin B6, potassium and manganese while vitamin A is rich in carrots.

Ingredients to make Carrot Basket with Banana Surprise:

½ cup mashed ripe banana, 1 cup finely grated carrot, 2 cups maida, 1 cup sugar, 1 tsp. baking soda, 1 tsp. baking powder, 1 tsp. cocoa powder (unsweetened), 1 cup butter, 4 eggs/1 cup milk, ½ tsp. vanilla extract

For frosting: 1 chocolate bar, 3 tbsp. unsalted butter, 1 cup icing sugar, ¼ tsp. ground cinnamon

Steps to make Carrot Basket with Banana Surprise:

1. Preheat oven to 350℉.

2. Sift maida, baking powder and baking soda and transfer to a bowl.

3. Whisk butter and sugar in a large bowl until well blended. Add eggs and blend well. Mix the dry ingredients and add carrots and banana and mix well.

4. If you are adding only milk, you can add now little by little until the batter is in the right consistency of cake batter.

5. Grease and flour 12- cup Bundt pan.

6. Transfer the batter to the prepared pan and bake until tester inserted near centre of cake comes out clean, about an hour.

7. Let the cake stand in pan for 10 minutes.

8. Turn out cake onto rack and cool.

For frosting:

1. Beat icing sugar, butter and cinnamon in medium bowl until smooth.

2. Spread frosting over cake. Grate the chocolate bar over the cake and refrigerate.
