A tangy Brinjal Surprise will treat your tongue and help in getting loads of vitamin A, K, calcium, folate and fibre.

2 brinjals, 1 tsp seedless tamarind pulp, 3 tbsp peanuts, 2 tbsp grated coconut, oil, 1 tsp sugar, 1 onion finely chopped, ½ tsp ginger-garlic paste, 1 tsp coriander powder, 1 tsp turmeric powder, 1 tsp garam masala, 1 tsp mustard seeds, 1 tsp fennel powder, salt, water
1. Wash brinjals make a slit in them. Or you can cut pieces of brinjals to make it easy for your child.
2. In a pan dry roast coconut, peanuts, Roast for 5-6 minutes till you get a nice aroma and then transfer to a blender. Add little water and blend it to a fine paste. Set aside.
3. Heat 2 tbsp of oil in a pan and cook the brinjals till they becomes little soft. Once done, remove the brinjals from pan and keep aside.
4. In the same pan, heat 1 tbsp oil, add mustard seeds. Add chopped onions and cook till they are translucent. Add ginger-garlic paste and cook for a while.
5. Add the grounded paste, coriander powder, turmeric powder, fennel seeds powder, garam masala, salt and mix. Cook for 2-3 minutes and add water to make sure that the spices do not burn.
6. Add tamarind pulp and water and cook the gravy till the oil gets separate from it.
7. Add the fried brinjals to the gravy and cook covered on medium flame for 10-15 minutes.
8. Switch off the flame and garnish it with coriander leaves.
Serve this Brinjal Surprise with rice and chapati. You will have a extra plate of rice with the gravy.
