Bitter Gourd Juice contains a list of important nutrients ranging from iron, magnesium and vitamin to potassium and vitamin C. An excellent source of dietary fiber, it also contains calcium and potassium. It helps in maintaining blood sugar levels, cleanses the liver, boosts immune system and is very good for the eyes. Bitter Gourd Sabzi is a very common dish and made all over India. Just taste the bitter gourd cooked this way and you and you will forget that this vegetable is supposed to be bitter.

Bitter gourd-5 large, jaggery-2 tsb, salt-to taste, oil-3 tsb, mustard-1 tsb, turemric powder tsb, red chilli powder-1/4 tsb, garam masala-1/4 tsp and jeera powder-½ tsp
1. Scrape the bitter gourds. Slit them vertically and remove the seeds. Rub two tablespoons salt all over the bitter gourds. Set aside for two hours. Wash thoroughly and squeeze dry.
2. Heat sufficient oil in a non stick kadai and deep fry the bitter gourds till dark brown. Drain on absorbent paper.
3. Heat three tablespoons of oil in a non stick pan and add mustard seeds and wait till they splutter. Add the turmeric powder, jeera powder and red chilli powder and sauté for a minute or two.
4. Add the jaggery, bitter gourds and adjust the salt. Cover and cook for 5 minutes.
Serve hot.
