Chickpeas are a good source of protein. Along with carrots, which are rich in vitamin A and beans, which are a powerhouse of nutrients that includes protein, carbohydrates, vitamins and minerals, you can prepare a delicious side dish called Beans Carrot Recipe. It goes excellently with plain rice or chapattis. Adding curry leaves and coconut, enhances the taste and makes it an awesome recipe.

Contents
½ cup carrot, ½ cup beans, ¼ cup boiled chickpeas, 1 tsp coconut, 3-4 curry leaves, 1 tsp mustard seeds, ½ tsp urad dal,1 tsp oil, 2 tsp water
1. Finely chop the beans and carrot.
2. In a kadai, add oil. Once the oil is warm, add mustard seeds. Once it splutters, add the urad dal and curry leaves. As the urad dal changes colour, put the beans and carrot.
3. Add little water and cover with lid. Cook on medium flame till the veggies don’t turn tender. Keep stirring in between.
4. Once all the moisture is gone and the veggies are cooked, add the boiled chick peas and give a good stir.
5. Add salt and mix well.
Hot and delicious Beans Carrot Recipe is ready to devour and enjoy. Serve with chapatti or plain rice.
