This is a very popular sweet dish of Uttarakhand that is made from khoya and covered with many tiny sweet balls. It is very tempting and tasty too as it has a unique taste. Make any occasion special with this delicacy of Uttarakhand.

    Ingredients to make Bal Methai:

    1½ kg khoya, 500 gm sugar, 50 gm khaskahas, 500 gm powdered sugar, ½ cup milk, 10 gm tartaric acid, 1 tsp ghee, water as required

    Steps to make Bal Methai:

    1. In a pan take water, sugar and tartaric acid to make sugar syrup.

    2. Let it boil on low flame for few minutes.

    3. When the sugar dissolves completely in the water then add milk to it.

    4. When you start noticing some foam on the surface of the water then take it off with a spoon.

    5. Let the sugar syrup simmer till it thickens up.

    6. Once it thickens, take it off from the gas and then keep half sugar syrup aside.

    7. In the same pan, add khoya and sugar powder.

    8. Keep stirring the khoya till it turns dark chocolate brown in color.

    9. Once the mixture turns dark brown, switch off the flame.

    10. Take a plate and grease it with ghee. Spread the khoya mixture in this plate.

    11. Once the mixture gets cool cut it into barfi shape.

    12.To make sugar coating, take the remaining sugar syrup and heat it in a pan.

    13. Add khuskhus to it and let the sugar syrup turns thick.

    14. Now let the sugar syrup cool down and then roll the barfi into this mixture to coat it up with sugar balls.
